Traditionally served alongside turkey, cranberry sauce is an excellent choice to “cool out” grilled meats or game since cranberries have a”cold” thermal property according to Traditional Chinese Medicine. You can buy cranberries at season’s start, place in a freezer bag, and freeze for later use during the year. The sauce also freezes well.
1-12 oz. package of cranberries
¼ c. orange juice
½ tsp. vanilla
Pinch of sea salt
2/3 to ¾ c. sugar
Wash and pick over the cranberries, removing any squishy or bad ones. Place in a saucepan with the orange juice, vanilla, and salt, and cook on medium heat until you hear the berries popping. Reduce heat to low. Add sugar incrementally until sweetened to your liking. Cook until thickened, stirring frequently. Skim off any foam. Clean up any sauce that may have spilt onto the cooktop immediately as hot sugar will pit glass. Not only can you make this a few days ahead of an event, but leftovers freeze well.
